Olive Haloumi Savoury Muffin

These savoury muffins are a great snack to keep you going. They are loaded with calcium, healthy fats and fibre. The whole family will love these!

Cook Time: 25-30 minutes

Total Time: approximately 1 hour

Ingredients

Cheese & vegetables 

  • 1/2 cup green olives, pitted & chopped

  • 1/2 cup fresh coriander, chopped finely

  • 3 shallots & green, chopped finely 

  • 150g haloumi, chopped into small pieces

Dry ingredients 

  • 1 cup wholemeal flour (or spelt flour)

  • 1 tsp baking powder

  • 1 tsp baking soda 

Wet ingredients 

  • 1 cup A2 milk

  • 2 eggs, whisk 

  • 3/4 cup olive oil 

  • Sesame seeds to top.

Instructions

  1. Preheat oven to 180C (standard) or 160C (fan).

  2. Brush a 12-hole standard muffin tin generously with butter or olive oil spray, being sure to slather.

  3. Chop up the vegetables, cheese and herbs and set aside.

  4. Mix the dry ingredients in a bowl.

  5. Whisk Wet ingredients in a separate bowl.

  6. Pour Wet into the Dry ingredients bowl. Mix well. Add cheese and vegetables, mix just to incorporate the remaining bits of flour - don’t over-mix.

  7. Divide between 12 holes in a muffin tin (I use an ice cream scooper). The batter should be thick and fill the muffin tin to the top.

  8. Bake for 22 - 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.

  9. Remove onto the cooling rack and cool slightly before getting stuck into them!

Enjoy with a salad or as is!
