Olive Haloumi Savoury Muffin
These savoury muffins are a great snack to keep you going. They are loaded with calcium, healthy fats and fibre. The whole family will love these!

Ingredients
Cheese & vegetables
1/2 cup green olives, pitted & chopped
1/2 cup fresh coriander, chopped finely
3 shallots & green, chopped finely
150g haloumi, chopped into small pieces
Dry ingredients
1 cup wholemeal flour (or spelt flour)
1 tsp baking powder
1 tsp baking soda
Wet ingredients
1 cup A2 milk
2 eggs, whisk
3/4 cup olive oil
Sesame seeds to top.
Instructions
Preheat oven to 180C (standard) or 160C (fan).
Brush a 12-hole standard muffin tin generously with butter or olive oil spray, being sure to slather.
Chop up the vegetables, cheese and herbs and set aside.
Mix the dry ingredients in a bowl.
Whisk Wet ingredients in a separate bowl.
Pour Wet into the Dry ingredients bowl. Mix well. Add cheese and vegetables, mix just to incorporate the remaining bits of flour - don’t over-mix.
Divide between 12 holes in a muffin tin (I use an ice cream scooper). The batter should be thick and fill the muffin tin to the top.
Bake for 22 - 25 minutes or until the muffins are golden and crusty and spring back when touched in the centre.
Remove onto the cooling rack and cool slightly before getting stuck into them!
