Snack Right Zucchini Loaf
This loaf is fluffy and delicious, packed with protein, carbohydrates and omega 3. The added honey gives it that little bit of sweetness to cut through the zucchini and walnut flavours. This loaf is also an easy breakfast for all the mums out there that just need something to grab and go.

Ingredients
3/4 cup almond meal
1 cup spelt flour
¼ cup hemp seeds (or ground flaxseeds)
3 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
2 eggs, lightly beaten
1/4 cup olive oil
2 medium zucchinis, grated
⅓ cup almond milk
¼ cup honey
¼ cup chopped walnuts
Instructions
Preheat the oven to 180 degrees. Line a small loaf pan with baking paper.
In a large mixing bowl, combine the oil and honey. Beat them with a whisk until they are combined. Add the eggs and beat all the ingredients.
Add the milk, baking powder, cinnamon and nutmeg and mix together. Stir in the zucchini, then add the flour, hemp seeds and almond meal and stir until all the ingredients are combined. Gently fold in the walnuts.
Pour the batter into your lined loaf pan and sprinkle with chopped walnuts.
Bake for approximately 60 minutes, or until a knife inserted into the centre comes out clean. Allow the bread to cool then remove from the pan.
Eat with butter or store in the refrigerator for another day!
